Instructions for Shrimp and Corn Soup with a tomato-based flavour
Step 1: Prep Your Shrimp
Start by giving your fresh shrimp a rinse under cold water, then pat them dry with a paper towel.
Set them aside; they’re going to be the star of our soup!
Step 2: Create a Flavourful Stock
In a large pot, heat up a bit of cooking oil over medium heat.
Add those dried shrimp, some minced ginger, and a finely chopped red onion.
Let them sizzle and dance for a few minutes until the onions become light orange.
Step 3: Add Corn Kernels
Now, let’s add the fresh corn kernels to the pot.
Stir them around and let them mingle with the ginger and onion for a couple more minutes.
Step 4: Make a Roux
Sprinkle a tablespoon of corn flour over the corn and stir it in to create a roux.
This helps thicken the soup and gives it a delightful texture.
Keep stirring for about 2 minutes to let the flour cook and do its thing.
Step 5: Add Water and Let It Simmer
Pour in 2 litres of water.
Yes, it’s a lot but we need it.
Bring the mixture to a boil, and then lower the heat to a simmer.
Let it cook for around 20-30 minutes.
That gives the corn time to get tender and the flavours time to really get to know each other.
Step 6: Season It Up
Now comes the fun part – seasoning! Add a tablespoon of fish sauce, some minced garlic, half a teaspoon of chicken powder, half a teaspoon of pepper, and a quarter teaspoon of salt.
But here’s the secret: adjust the seasonings to your own taste.
Feel free to add a pinch of chili flakes if you like a little heat!
Step 7: Cook the Shrimp
Just when you think it can’t get any better, it does.
Drop those fresh shrimp into the pot and let them cook for about 3-4 minutes.
They’ll turn a lovely shade of pink and become perfectly tender.
Be careful not to overcook them, though – we want them to be juicy!
Step 8: Add Tomatoes
Right before serving, toss in some diced tomatoes.
They add a fresh, zesty touch to the soup.
Step 9: Serve and Enjoy
Ladle this flavourful masterpiece into bowls and, if you like, garnish it with moringa leaves for a pop of green.
Season with a pinch of salt and pepper, to suit your taste.
So, there you have it, a warming bowl of Shrimp and Corn Soup with a tomato-based broth that’s a symphony of flavours in every spoonful.
Whether it’s a cosy night at home or a gathering with loved ones, this soup is sure to impress and satisfy.
